The next star of the Hop Idol series is Cashmere. I've been looking forward to this day ever since I fell in love with this variety during my visit to America for last year's Hop Selection.
This time, I used a recipe with a large amount of oats reminiscent of the New England style, resulting in an IPA with a slightly cloudy appearance and a soft, creamy body. However, I used West Coast yeast for fermentation and reduced the sweetness to bring out the hop's character more clearly. The finished beer boasts a powerful aroma of citrus, papaya, and mango from the Cashmere hop, unleashing a surprisingly vivid and sweet, juicy tropical character. The depth and layered complexity, unexpected for a single-hop beer, are truly remarkable. The soft mouthfeel derived from the oats invites you to take another sip. This is a beer that Cashmere fans, and even those who haven't tried it yet, should definitely try.
