Far Yeast Bicycle Coffee Stout was brewed in collaboration with Bicycle Coffee Tokyo, a natural roastery born in Oakland, California (USA) in 2009.
For this ninth collaboration beer, we took on the challenge of creating a royal coffee stout based on the stout, a staple of coffee beers, and steeped coffee beans blended and roasted at Bicycle Coffee Tokyo. After conducting steeping tests with several different blends, a blend of 60% Mexican, 25% Ethiopian, and 15% Guatemalan beans, mainly medium roasted, was created, with a heavy roasted aroma and a clear, well-balanced flavor. By combining it with dry stout, which has a clean mouthfeel, roasted malt flavor and bitterness, we have created a stout that, although a black beer, has a light and refreshing taste and a marriage of aromatic coffee.
