Our 20th installment in the "Friends Series" (288th batch): The time has finally come to release our collaboration beer with Be Easy Brewing from Aomori!

By having both breweries brew their own beers and selecting styles familiar to the host brewery, the collaboration provided an opportunity for the other brewery to experience brewing methods and techniques that they had not yet refined, as well as to experiment with ingredients that neither brewery had used before. The beer brewed at Kyoto Brewing was a classic Belgian Wit, but the use of a kettle sour method and unique botanical ingredients gave it a 21st-century twist. When this style first appeared in the Middle Ages, it is conceivable that the beer of that time had a somewhat sour taste, given the high proportion of wheat used and the fact that brewing equipment and technology were not as advanced as they are today. We aimed to revive these unique characteristics that have been refined over time, while also using botanical ingredients that define the style, such as orange peel and coriander. However, this time we turned our attention to citrus ingredients that are even more vibrant, using lemongrass, which is widely used in Thai cuisine, instead of orange peel, and lime leaves instead of coriander.

As a result, this beer has a gentle acidity and cloudiness, and the flavor that spreads in the mouth changes from lemon and lime to nuances of yogurt and cream, resulting in a refreshing citrus character. It's a unique beer that embodies the "let's try it" spirit that was at the heart of this collaboration!
