We've also reduced the amount of hops used to impart bitterness and instead carefully considered the timing of their addition to further enhance the flavor and aroma. However, by using high-alpha-acid hops, we've created a beer that is soft yet still offers a moderate bitterness characteristic of an IPA. But, since it is still a Belgian IPA, we can't overlook the appeal of Belgian yeast, which is a major characteristic of this style. Known for producing fruity ester aromas during fermentation, this beer has been rebranded to further enhance its flavor.\u003c\/p\u003e\n\u003cp\u003eClassic citrus hops like Cascade and Centennial have been replaced with hops such as Liwaka, Rakau, and Mosaic. These hops not only contribute a bright, tropical citrus aroma but also contain significantly higher levels of hop oil than previous hops. Furthermore, the recipe has been modernized, and the use of the latest dry-hopping equipment, Hopnik, has improved the ability to extract hop flavors compared to traditional methods. The beer brewed at Kyoto Brewing was a classic Belgian Wit, but the use of a kettle sour method and unique botanical ingredients gave it a 21st-century twist. When this style first appeared in the Middle Ages, it is conceivable that the beer of that time had a somewhat sour taste, given the high proportion of wheat used and the fact that brewing equipment and technology were not as advanced as they are today. We aimed to revive these unique characteristics that have been refined over time, while also using botanical ingredients that define the style, such as orange peel and coriander. To this, he used Eggers Special Lily's Liwaka, Peacharin, and Nelson Sauvin during the brewing stage, and further added Liwaka and Nelson Sauvin as dry hops. This Liwaka, named \"Lily,\" refers to a selection from a specific lot harvested at Eggers Farm. It boasts a richer flavor reminiscent of fully ripened fruit than typical Liwaka, with a subtle resinous note. The beer has a medium bitterness, beautifully balanced with the malt body. Juicy fruit flavors of mango, peach, and white grape unfold, and while it possesses a powerful hop aroma comparable to an IPA, its moderate alcohol content makes it light and very easy to drink.
